Ingredients
  • amount (double)
  • 1 lb (2 lbs) dried pinto beans, washed
  • 1 medium (1 large) onion, peeled and roughly chopped
  • 2 T (1/4 C) chopped garlic
  • ¼ C (1/2 C) olive oil
  • 1 t (2 t) oregano
  • 2 t (4 t) salt
  • 5 C (10 C) water
Instructions
  1. Combine all ingredients in a pressure cooker.
  2. Cook on high pressure for 50 minutes; natural release.
  3. Remove excess water, but set it aside if you need to add some back during blending. Blend with immersion blender until smooth.
